If you’re looking for a healthy meal, this is your recipe. I love curried chicken salad not only because it’s delicious, but because you can make a huge bowl of it and eat it over the next few days. It’s a great dish to make ahead for lunches or a dinner when you know you’ll be tight on time. The plain greek yogurt rather than mayo makes it much healthier than typical chicken salad.
For optimum flavor, I suggest boiling your chicken with chicken broth, curry, and cumin to soak some flavor in. Serve however you wish, and experiment with add-ins.
I made this easy side dish to go along with some pork loin on the grill a few nights ago. Here is how I threw it together:
Cut up some veggies, place in foil.
Cut a few rosemary stalks and arrange around the veggies.
Drizzle with olive oil and sprinkle a tiny bit of salt over them.
Wrap foil around veggies to make a tight package.
I made up this recipe after ordering Southwest Egg Rolls at a restaurant and thinking, “I could totally make these”. Turns out, they aren’t difficult to make – but they are time consuming. T and I were bored this past weekend as a massive rainstorm took its time drenching the city. We ventured to the grocery store and picked up the few items we needed to make a batch. Definitely worth the time! The egg rolls make great party food, and you can come up with different combinations of fillings to make things interesting.

I am currently obsessed with capers. In case you don’t know what capers are, they are the unripened bud of a prickly plant that is native to the Mediterranean. They are pickled in vinegar, brine, wine, or salt and have a tangy flavor. They are especially good with lemon and chicken, so I threw together a baked chicken dish using those ingredients and some random things in my fridge. The dish ended up being very, very good.
