Healthy Curried Chicken Salad Recipe

IMG_7944If you’re looking for a healthy meal, this is your recipe. I love curried chicken salad not only because it’s delicious, but because you can make a huge bowl of it and eat it over the next few days.  It’s a great dish to make ahead for lunches or a dinner when you know you’ll be tight on time. The plain greek yogurt rather than mayo makes it much healthier than typical chicken salad.

For optimum flavor, I suggest boiling your chicken with chicken broth, curry, and cumin to soak some flavor in. Serve however you wish, and experiment with add-ins.

I’ve tried several kinds of fish tacos in my life.  I thought I had tasted the best until I tried this recipe.  T and I have simplified and perfected it for your use.  Try them.  They are really easy, healthy, and just plain delicious!
