If you’re looking for a healthy meal, this is your recipe. I love curried chicken salad not only because it’s delicious, but because you can make a huge bowl of it and eat it over the next few days. It’s a great dish to make ahead for lunches or a dinner when you know you’ll be tight on time. The plain greek yogurt rather than mayo makes it much healthier than typical chicken salad.
For optimum flavor, I suggest boiling your chicken with chicken broth, curry, and cumin to soak some flavor in. Serve however you wish, and experiment with add-ins.

I made up this recipe after ordering Southwest Egg Rolls at a restaurant and thinking, “I could totally make these”. Turns out, they aren’t difficult to make – but they are time consuming. T and I were bored this past weekend as a massive rainstorm took its time drenching the city. We ventured to the grocery store and picked up the few items we needed to make a batch. Definitely worth the time! The egg rolls make great party food, and you can come up with different combinations of fillings to make things interesting.

This recipe is not very creative, but it is a classic. These peanut butter cookies take less than a half hour to whip up if you are a pro at whipping things up (I’m not quite there yet). This is my husbands #1 favorite dessert, and a good cookie for a crowd. This batch is for our church connect group tonight. I wouldn’t be surprised if T hides some away for himself.

My dear husband recently requested that I bake him a Pea Pickin’ Cake for his birthday. His mom found the recipe in a cookbook her own mother-in-law gave her in 1983. The popular southern dessert got its name from the fact that it was often served to the summertime pea pickers as a cool treat. We are currently experiencing temperatures in the mid-90s every day, so a cold piece of this cake really hits the spot. I happily displayed the final product on the cake stand we received as a wedding gift and added some blueberries to the top for some added color (since we currently have a freezer full of them).
